I believe I saw a screenshot or a loading screen where someone used a greenhouse w/ trees around the sides so you only see one side of it to make it look like a small waterfall.

They did, they also used snow cover and the big snowflakes to show the water crashing at the bottom to give the illusion of water movement.
To add to what Lemlem is saying about the rivers:
1.) Adding gray bales on the edges, gives the appearance of an edge or rocks. I also added them to my river to give the appearance of rocks in the water.
2.) Adding white bales at the top of water drop offs and the bottom of the drop off adds the illusion of water movement i.e. rapids.
3.) I used green bales to make an island and placed the treehouse in it for visual effect.
4.) If you were lucky enough to get the watermill or waterfall, adding that along your river gives quite a visual impact as well.
5.) Also, as Lemlem said, adding trees to the side gives the effect of a rivers edge, also flowers/animals and other elements add to the visual impact as well.
